The article is devoted to the study of the laws of the kinetics of the extraction of target oil products from leafy shoots of long-leaved mint. To achieve the completeness of extraction, it is necessary to take into account factors that allow to intensify the extraction process. The factors allowing to intensify the extraction process were studied. The curves of the extractive substances yield during the intensification of the waste extraction process are discussed. long — leaved from the duration of the process at different extraction temperatures at an ethanol concentration of – 60 %. The dependence of the yield of extractive substances on the duration of the process at a process temperature of 20, 40 and 60 oC (x) is described by second-order polynomial equations, the value of the approximation reliability is, respectively, R1 = 0.92; R2 = 0.93 and R3 = 0.93. Organoleptic and physico-chemical quality indicators of water-alcohol extract of long-leaved mint are described.
